Kiawe Honey (Ewa)
Got a sweet tooth?...meet your match! This bright, golden goodness comes from the Kiawe (Hawaiian Mesquite) trees of the Ewa plains and boasts extra sweet flavor. This is a single-harvest variety so when it's gone, it's gone.
Note: Kiawe honey is known for its quick crystallization. This occurrence is due to the honey being naturally supersaturated (there's more sugar than can bee freely suspended in the liquid honey) and so it causes natural crystallization. Many people (specially in parts of Europe) love crystalized honey on morning toast...or try it on biscuits! If it's not your thing, fear not as a warm water bath will dissolve said sugar crystals back into liquid goodness at anytime! (Just don't heat over 105ºF. or beneficial enzymes in the honey will break down, losing its valuable health benefits).

We take pride in harvesting, processing and bottling our honey in clean, sanitary conditions. Some of our honey varieties are bottled in a Certified Kitchen while others such as those sold at fairs and local markets are oftentimes processed in our home-based kitchen to reduce cost. Home-based agricultural producers of honey are exempt from processing honey in certified food-processing establishments when certain conditions are met (Hawaii Rev. Statute §328-79). Home-produced products have not been inspected by the Department of Health and are labeled as such. We firmly believe that there is no difference in the quality of product or sanitation between our bottling locations and guarantee that our honey is always straight from the hive, unprocessed in any way.
